This Million Dollar Chicken Alfredo casserole was a HUGE hit in our house. Spaghetti casserole loaded with alfredo sauce, four cheeses and chicken. OMG! How could it not be good?!??! This is a great make ahead or freezer meal. I like to split the recipe into two pans and bake one and freeze one for later.

As I said, we LOVED this Million Dollar Chicken Alfredo. It is so creamy and delicious. I didn't want to stop eating it! We served this with a quick salad and a pan of Garlic Parmesan Skillet BreadIt makes a ton, so this is a great casserole for dinner parties or potlucks.

This casserole uses cottage cheese. I already know the emails and comments that are coming. I like cottage cheese in pasta casseroles. I never ever eat it straight out of the container - yuck! BUT it is heavenly in casseroles. If you haven't tried it, I really encourage you to branch out and try it. If you aren't ready to trust the word of a tried and true picky eater, you can try and substitute ricotta for the cottage cheese. If you don't use cottage cheese or ricotta, I have lots of other casseroles on the blog. Check them out! https://www.plainchicken.com/search/label/casserole

Gluten Free Cheesecake Tarts Recipe

Posted by [email protected] on Comments comments (0)
Post image for Gluten Free Cheesecake Tarts Recipe

Fancy enough for tea with Mom or casual enough for a summer barbecue, these personal-sized (or couple-sized) treats consist of a creamy lemony filling with crunchy graham cracker crust and fresh berries and mint on top. In fact, if you want to take a step out of the ordinary this Labor Day, this lovely Gluten Free Cheesecake Tarts recipe is the way to do a fun and easy dessert!

Start with a simple gluten-free graham cracker crust and fill them up with a cream cheese filling with a special ingredient that gives these a boost of nutrition – NeoCell Super Collagen Powder.

Collagen is great for people of all ages, but is particularly important for those over the age of 25, as our bodies stop producing collagen and that begins to show with signs of aging – wrinkles, joint pain, etc. Collagen supplements help that and can be incorporated into recipes flawlessly, like this cheesecake tarts recipe.

These can be made a day ahead, so they are perfect for entertaining guests. You can top them with any fresh berries of your choice – perhaps use what’s in season or on sale at your local market.

Enjoy!

Gluten-Free Cheesecake Tarts Recipe

Ingredients

For the crust:

Gluten-free nonstick cooking spray
2½ cups gluten-free graham cracker crumbs
6 tablespoons melted butter

For the filling:

8 ounces cream cheese, at room temperature
¼ cup granulated sugar
6 tablespoons NeoCell Super Collagen Powder
1 lemon, zest finely grated and juiced
2 cups heavy cream

For the topping:

Fresh berries
Mint sprigs

Directions

Preheat the oven to 350 degrees.

Spray 6 (4-inch) tart pans with removable bottoms with cooking spray or a 9-inch pie pan with cooking spray. Combine graham cracker crumbs and melted butter in a mixing bowl and mix until fully combined. Press the mixture firmly into the tart pans. Bake for 10 minutes or until golden brown. Let cool.

In the bowl of an electric mixer fitted with a paddle attachment, beat the cream cheese, sugar, and collagen until smooth. Add the lemon juice and zest and mix well.

In a clean bowl, whip the cream using the whisk attachment until stiff peaks form. Take a big scoop of the whipped cream and stir it into the cream cheese mixture to lighten it up and then gently fold in the rest of the cream cheese mixture. Spoon into cooled tart crusts. Cover lightly with plastic wrap and refrigerate for at least 4 hours. Can be made 1 day ahead.

Before serving, top with berries and mint sprigs.

Whole30 Sausage Balls

These Whole30 compliant sausage balls can keep in the freezer for a quick and easy breakfast!

We are no longer on the Whole30 plan, but we try to maintain as healthy a diet we can to keep feeling great!  Breakfast can get tricky especially when you are in a hurry and need something fast and convenient.  I used to make regular sausage balls using Bisquick to keep in the freezer for a fast breakfast option, but those aren’t exactly the healthiest (although they definitely are the tastiest!)

These Whole30 compliant sausage balls can keep in the freezer for a quick and easy breakfast!I developed this Whole30 compliant sausage ball recipe and was very pleased with the results!  Ben and the kids like them, too.  Don’t get me wrong, they are not as delightful and greasy and cheesy as those sausage balls you’ve known to love.  BUT, they really are a good alternative if you want something healthy and quick.  I really look forward to eating them with my morning coffee or quickly grabbing a few before heading on the road.  (We typically leave at 4:00 AM for our road trips which means no time to make breakfast.)

These Whole30 compliant sausage balls can keep in the freezer for a quick and easy breakfast!Because there is no cheese in these, I added onion and apples to help with the flavor and moisture (similar to my breakfast sausage recipe).  Sage is one of my favorite breakfast sausage spices, and I also added dried rosemary, garlic powder and parsley.  And, instead of Bisquick, we’re using almond flour.

Do you love the original sausage balls too much to give these a try?  Do it, and let me know what you think!

These Whole30 compliant sausage balls can keep in the freezer for a quick and easy breakfast!

Ingredients

  • 3/4 lb ground pork
  • 2 1/2 cups almond flour
  • 1/2 sweet onion peeled and grated
  • 1 apple (any variety) unpeeled and grated
  • 1 egg
  • 1 tsp ground sage
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 tsp crushed rosemary
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F and adjust rack to middle of oven.  Line baking sheet with parchment paper or silicone mat.

  2. Mix all ingredients in a large bowl.  Spoon 1 1/2-inch balls on baking sheet. (I use my medium sized cookie scoop.)  Bake for 20-23 minutes until just golden brown.

Candied Orange Olive Oil Cake + Cornmeal & Rum

Posted by [email protected] on Comments comments (0)

Candied Orange Olive Oil Cake + Cornmeal & Rum

Candied Orange Olive Oil Cake + Cornmeal & Rum

Here we are, the first post of the new year.

I want to do something different this year and really, it’s something I started last year but now I really want to make it a thing: Cakes without frosting. I’m calling it #cakeunfrosted (you know, “life-unplugged”….that sort of thing). I want to see how many ways I can decorate a cake without using frosting. I hope you all will join me in this challenge, as well!  If you bake something and happen to post it on Instagram, use that #cakeunfrosted hashtag so that I can see it and share it in my stories! I’d love to see what you all come up with!

First up in a long line of cakes to come (I hope!) is this Candied Orange Olive Oil Cake with Rum & Cornmeal.

Oh, you guys. This cake is dreeeeeeamy.

It’s two layers of soft, fragrant, orange-scented olive oil cake studded with flecks of cornmeal and coated with an orange syrup and candied oranges. The combination of rum and olive oil gives the cake an almost buttery flavor that I can. not. get. enough. of.

Obviously I’ve used orange here but feel free to customize this cake with any citrus! Orange, mandarin, lemon, blood orange, cara cara orange, grapefruit, satsuma, tangerine….so many glorious options lie in front of you!

Happy New Year to all of you and happy #cakeunfrosted baking!

Total time

2 hours 15 mins

Author: Kayley

Recipe type: Cake

Serves: One 6" Cake

Ingredients

  • INGREDIENTS:
  • FOR THE CAKE
  • 1 cup Raw Cane Sugar
  • 3 Large Eggs
  • Zest of one Orange
  • ¼ cup Golden Rum
  • 1 cup high quality Olive Oil (use extra virgin for a stronger taste and regular for a milder flavor)
  • 1⅓ cups Whole Milk
  • 1½ cups All-purpose Flour
  • ½ cup medium-grind Cornmeal
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • FOR THE CANDIED ORANGES
  • 1½ cups Raw Cane Sugar
  • ¾ cup Water
  • 2 Navel Oranges, sliced into ⅛" rounds (a sharp mandolin works great for this)
  • Kumquats, to top
  • Fresh Mint, for garnish

Instructions

  1. TO MAKE THE CAKE:
  2. Preheat the oven to 350 degrees.
  3. Grease and flour two 6" round cake pans (works best if pans are at least 3" deep).
  4. Place the eggs and sugar in a large mixing bow and beat together until pale and creamy. Add the orange zest, rum, olive oil, and milk, and whisk in.
  5. In a separate bowl, mix together the flour, cornmeal, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the wet ingredients, mixing just until combined - Do not overmix!
  7. Divide the batter evenly between the prepared pans, dropping them on the counter a few times to nix air bubbles.
  8. Bake in the preheated oven for 35-40 minutes, or until a tester inserted into the center of the cakes comes out clean. While the cakes are baking, prepare the candied oranges.
  9. Once the cakes are done, remove from the oven and let them cool for 15 minutes. Remove cakes from pan and let cool on a wire rack while the oranges finish cooking.
  10. TO CANDY THE ORANGES & ASSEMBLE:
  11. Place the sugar and water in a saute pan and stir until the sugar is dissolved.
  12. Place pan over medium/high heat and bring to a boil. Reduce heat to medium/low and add the orange slices to the sugar mixture, spreading them eveny over the surface of the syrup. It's alright if they overlap a bit. Let the orange slices cook for 1 hour, makeing sure that the syrup is only gently bubbling. After one hour, pull each orange slice out of the syrup and lay on a siplat mat or peice of parchment paper.
  13. Level the tops of both cake layers. Pour ⅓ of the syrup from the candied oranges over the top of one of the cake layers. Spread the syrup evenly over the surface and place the other cake on top of that layer. Pour the remaining syrup over the top of the cake, using a basting brush to coat the top and sides with the syrup.
  14. Spray or coat the blade of a knife with oil. Use it to cut the candied orange slices in half. Place the candied orange slice halves on the cake as shown in the photos. They will stick right to the cake thanks to the sticky syrup coating. To place them over the top of the cake you'll need to cut a small wedge off of each half that you place around the perimeter - the cut sides should face out, lining the edge.
  15. Top the cake with sliced kumquats and fresh mint leaves.
  16. Best eaten the same day baked.

Boozy Smoothie Popsicles

Posted by [email protected] on Comments comments (0)

What happens when a cocktail collides with a smoothie? You get Boozy Smoothie Popsicles! 4 ingredients are all you need to be on your way to enjoying these pop-tails! Perfect for poolside, deck side or just because you feel like a little something extra.

Stack of Boozy Smoothie Popsicles

This post is sponsored by The Frozen Garden. Opinions are my own. NOTE: In case it wasn’t obvious with the word boozy in the title these popsicles are intended for the 21 and over crowd. If you’d like to make a family friendly version you can omit the alcohol.

Smoothies are something we’re all familiar with. They’re delicious and filling. Problem is though, sometimes you just don’t know how much of which ingredients to combine together to create that perfect combination. It’s all about balance.

Hand holiday a Boozy Smoothie Popsicles

If you fall into that category or if you’re looking for a little more convenience in your life, Frozen Garden smoothies are a great option! They’re made with WHOLE, REAL ingredients such as fruits, vegetables, seeds and spices—with no added sugar or chemical preservatives. They come in NINE different flavor pouches. So there’s bound to be one that suits your taste.

Boozy Smoothie PopsiclesTheir nutrient-dense smoothies go from freezer to glass in about a minute! Fast and flavorful. The Frozen Garden sources local ingredients, when available, from farms within a 100 miles of their headquarters in Northwest Indiana. They’re also:

  • Non-GMO
  • Plant-based
  • Gluten Free
  • Dairy Free
  • Soy Free
  • Nut Free (except Jungle Breeze)
  • Vegan
  • Paleo and Whole 30 friendly

Boozy Smoothie Popsicles Ingredients

I chose Jungle Breeze for these boozy popsicles. It has coconut inside and I knew I wanted to highlight that summer flavor. We added coconut rum and sprinkled additional coconut flakes onto the popsicle for even more punch and a little texture.

Boozy Smoothie Popsicles in mold

To keep the popsicles extra creamy and dreamy we went with Greek yogurt and milk. As with any smoothie, you chunk all those into your blender and then blend until smooth. They couldn’t be easier to make.

Pour the smoothie mixture into your popsicle mold and freeze until firm. It’s really just that simple. To easily remove the popsicles, just run a little warm water onto the outside of the mold and they should pop right out.

Helpful Tips to make Taco Cheese Stuffed Meatballs:

  • Do not overmix the meat or you can end up with tough meatballs.
  • Use a cookie dough or ice cream scoop to get uniform meatballs.
  • Be sure to fully seal the cheese within the meatballs or all of the cheese will ooze out while broiling.
  • To make extra meatballs to keep in the freezer, double or triple this recipe. Transfer extra meatballs to a rimmed baking sheet and freeze completely. Then transfer frozen meatballs to a ziploc bag or container.
  • This recipe makes a mild flavored taco meatball. If you prefer extra taco flavor, double the amount of taco seasoning.

What you will need to make Taco Cheese Stuffed Meatballs:

    • Large mixing bowlYou will need a bowl large enough for the ingredients and your hands.
    • Sharp knifeThis recipe requires the cheese to be cut into cubes. A good, sharp knife is always handy to have in the kitchen.
    • Rimmed baking sheetused for everything from cookies to roasting, a good baking pan will last for years.

    Enjoy!
