As I said, we LOVED this Million Dollar Chicken Alfredo. It is so creamy and delicious. I didn't want to stop eating it! We served this with a quick salad and a pan of Garlic Parmesan Skillet Bread. It makes a ton, so this is a great casserole for dinner parties or potlucks.
This casserole uses cottage cheese. I already know the emails and comments that are coming. I like cottage cheese in pasta casseroles. I never ever eat it straight out of the container - yuck! BUT it is heavenly in casseroles. If you haven't tried it, I really encourage you to branch out and try it. If you aren't ready to trust the word of a tried and true picky eater, you can try and substitute ricotta for the cottage cheese. Fancy enough for tea with Mom or casual enough for a summer barbecue, these personal-sized (or couple-sized) treats consist of a creamy lemony filling with crunchy graham cracker crust and fresh berries and mint on top. In fact, if you want to take a step out of the ordinary this Labor Day, this lovely Gluten Free Cheesecake Tarts recipe is the way to do a fun and easy dessert!
Start with a simple gluten-free graham cracker crust and fill them up with a cream cheese filling with a special ingredient that gives these a boost of nutrition – NeoCell Super Collagen Powder.
Collagen is great for people of all ages, but is particularly important for those over the age of 25, as our bodies stop producing collagen and that begins to show with signs of aging – wrinkles, joint pain, etc. Collagen supplements help that and can be incorporated into recipes flawlessly, like this cheesecake tarts recipe.
These can be made a day ahead, so they are perfect for entertaining guests. You can top them with any fresh berries of your choice – perhaps use what’s in season or on sale at your local market.

Gluten-free nonstick cooking spray
2½ cups gluten-free graham cracker crumbs
6 tablespoons melted butter
8 ounces cream cheese, at room temperature
¼ cup granulated sugar
6 tablespoons NeoCell Super Collagen Powder
1 lemon, zest finely grated and juiced
2 cups heavy cream
Fresh berries
Mint sprigs
Preheat the oven to 350 degrees.
Spray 6 (4-inch) tart pans with removable bottoms with cooking spray or a 9-inch pie pan with cooking spray. Combine graham cracker crumbs and melted butter in a mixing bowl and mix until fully combined. Press the mixture firmly into the tart pans. Bake for 10 minutes or until golden brown. Let cool.
In the bowl of an electric mixer fitted with a paddle attachment, beat the cream cheese, sugar, and collagen until smooth. Add the lemon juice and zest and mix well.
In a clean bowl, whip the cream using the whisk attachment until stiff peaks form. Take a big scoop of the whipped cream and stir it into the cream cheese mixture to lighten it up and then gently fold in the rest of the cream cheese mixture. Spoon into cooled tart crusts. Cover lightly with plastic wrap and refrigerate for at least 4 hours. Can be made 1 day ahead.
Before serving, top with berries and mint sprigs.

New Secret Recipe

Pizza Casserole

2 lb Ground beef
2 lg Onion, chopped(2 cups)
2 -28 oz cans whole tomatoes
1 -15 oz can tomato sauce
2 Tbs Italian seasoning
1 1/2 ts Salt
1/4 ts Pepper
2 -5 oz pkgs spiral macaroni
2 c Shredded mozzarella cheese (about 8 oz)
1/2 c Grated Parmesan cheese
Cook and stir ground beef and onions in 4 qt dutch oven until beef is light brown; drain. Stir in tomatoes (w/liquid), tomato sauce, Italian seasoning, salt and pepper; break up tomatoes w/fork. Heat to boiling; reduce heat. Simmer uncovered, stirring occasionally, 10 min.
Cook macaroni as directed on pkg; drain. Stir macaroni into beef mixture. Divide mixture between 2 ungreased 8 x 8 x 2 inch baking pans. Sprinkle each pan with 1 cup mozzarella cheese and 1/4 cup Parmesan cheese.
(To serve 1 pan immediately, cook uncovered in 350 F oven until hot and golden brown, about 30 minutes) Wrap, label and freeze no longer than one month)
TO SERVE: About 1 1/2 hrs. before serving, remove 1 pan pizza casserole from freezer and unwrap. Cook uncovered in 375 deg. oven until hot & golden about 1 1/2 hours. 2 meals, 6 servings each

These Whole30 compliant sausage balls can keep in the freezer for a quick and easy breakfast!

We are no longer on the Whole30 plan, but we try to maintain as healthy a diet we can to keep feeling great! Breakfast can get tricky especially when you are in a hurry and need something fast and convenient. I used to make regular sausage balls using Bisquick to keep in the freezer for a fast breakfast option, but those aren’t exactly the healthiest (although they definitely are the tastiest!)
I developed this Whole30 compliant sausage ball recipe and was very pleased with the results! Ben and the kids like them, too. Don’t get me wrong, they are not as delightful and greasy and cheesy as those sausage balls you’ve known to love. BUT, they really are a good alternative if you want something healthy and quick. I really look forward to eating them with my morning coffee or quickly grabbing a few before heading on the road. (We typically leave at 4:00 AM for our road trips which means no time to make breakfast.)
Because there is no cheese in these, I added onion and apples to help with the flavor and moisture (similar to my breakfast sausage recipe). Sage is one of my favorite breakfast sausage spices, and I also added dried rosemary, garlic powder and parsley. And, instead of Bisquick, we’re using almond flour.

Preheat oven to 350°F and adjust rack to middle of oven. Line baking sheet with parchment paper or silicone mat.
Mix all ingredients in a large bowl. Spoon 1 1/2-inch balls on baking sheet. (I use my medium sized cookie scoop.) Bake for 20-23 minutes until just golden brown.

Here we are, the first post of the new year.
I want to do something different this year and really, it’s something I started last year but now I really want to make it a thing: Cakes without frosting. I’m calling it #cakeunfrosted (you know, “life-unplugged”….that sort of thing). I want to see how many ways I can decorate a cake without using frosting. I hope you all will join me in this challenge, as well! If you bake something and happen to post it on Instagram, use that #cakeunfrosted hashtag so that I can see it and share it in my stories! I’d love to see what you all come up with!
First up in a long line of cakes to come (I hope!) is this Candied Orange Olive Oil Cake with Rum & Cornmeal.
Oh, you guys. This cake is dreeeeeeamy.
It’s two layers of soft, fragrant, orange-scented olive oil cake studded with flecks of cornmeal and coated with an orange syrup and candied oranges. The combination of rum and olive oil gives the cake an almost buttery flavor that I can. not. get. enough. of.
Obviously I’ve used orange here but feel free to customize this cake with any citrus! Orange, mandarin, lemon, blood orange, cara cara orange, grapefruit, satsuma, tangerine….so many glorious options lie in front of you!

1 - The Frozen Garden Jungle Breeze Green Smoothie pouch
1 cup milk
1 cup greek yogurt
1/4 cup coconut rum
Place all ingredients into a blender.
Blend until completely smooth.
Equally divide mixture into popsicle mold. Transfer to freezer and freeze until solid.
